Tuna Salad Sandwich Recipe

Serving size: 1

  • Albacore tuna (3 oz.)
  • 1 cup power greens (kale, spinach, chard mix)
  • 1 small celery stalk chopped
  • 1/4 cup mushrooms chopped
  • 1 tsp Dijon
  • 1/2 lemon juice & zest
  • 1 tsp Italian parsley chopped
  • Black or white pepper to taste

Directions:

  • Mix all ingredients, top on bread of choice.
  • You can store tuna salad air- tight in fridge for 2 days.
