Tuna Salad Sandwich Recipe

- Albacore tuna (3 oz.)
- 1 cup power greens (kale, spinach, chard mix)
- 1 small celery stalk chopped
- 1/4 cup mushrooms chopped
- 1 tsp Dijon
- 1/2 lemon juice & zest
- 1 tsp Italian parsley chopped
- Black or white pepper to taste
Directions:
- Mix all ingredients, top on bread of choice.
- You can store tuna salad air- tight in fridge for 2 days.
